g of pancetta

egg yolks

g of grated Parmesan cheese 

Olive oil 

Salt and pepper 

Preparation

Drop the pasta into boiling salted water for 7 minutes, then drain and set aside.

Cut the pancetta into thin strips and fry in a pan with the olive oil until crispy, then set aside.

In a bowl, mix the egg yolks and grated Parmesan with a fork.

Reheat the pasta and pancetta in a frying pan and add the egg yolks and Parmesan.

Add a pinch of nutmeg.

Season with salt and pepper.

Serve hot.
